San Matias

Craft is a huge part of what I consider the core of my work. As a bartender, I am always on the hunt for small-batch, artisanal spirits, and I found one that has stayed true to its craftsmanship. San Matias Tahona has really caught my attention, mainly because of its distilling process. The agave is steamed in stone ovens, crushed with a tahona stone from 1886, fermented in wooden vats, and distilled in copper pot stills.

Alright, time to make a Cocktail!

San Matias
2 oz San Matias Tahona tequila
1/2 oz Giffard Banane du Brésil
3/4 oz Caramelized Guava Syrup
1/8 oz DOM Bénédictine
1/2 oz Lime Juice
1/2 oz Lemon Juice
2 Dashes Peychaud’s Bitters

It’s mezcal Thursday and I am getting ready for the weekend. I’ll be bartending in a different city on Saturday, stay tune to find out more. Meanwhile, I’ll leave you with a new recipe.

2 oz Mezcal El Silencio 
1/2 oz Guavaberry liqueur
1/4 oz Amaro Nonino
1/8 oz Cinnamon syrup
4 dashes 1821 creole bitters

How blue are you?

I am not into blue curaçao myself, however I love me some blue cocktails.💙 Crazy dilema! Am I making my own??? Hell no, but I accomplish the cool color by reducing @jonessodaco berry lemonade and making a syrup out of it.

And it goes, 1 1/2 oz Rhum Clement premiére canne | 1/2 oz Suze | 1 oz lemon juice | 3/4 oz Jones soda berry reduction | 3 dashes Scrappys Bitters black lemon
